Coffee Popsicles for Summer

If you're looking for an easy, refreshing, and delicious summer treat, then you've come to the right place. These coffee and banana popsicles are the coolest summer dessert (or maybe even breakfast!) around, especially since they're made with nourishing whole-food ingredients.

I love everything about these whimsical coffee popsicles. They have a decadent, creamy texture thanks to pureed banana and peanut butter. They also have a phenomenal flavor; peanut butter and banana is obviously a classic pairing, and adding coffee brings it all to life. The combination of coffee and banana is what prompted me to call them "wired monkey" popsicles (you'll also want to check out my Vegan "Wired Monkey" Muffins too!).

These popsicles are easy, versatile, and much healthier than store-bought options. You'll just blend together some cooled coffee, a couple bananas, and a big dollop of peanut butter, then pour it into popsicle molds. They take about five minutes of hands-on time and could easily be made in small paper cups if you don't have popsicle molds. These peanut butter popsicles have some protein and healthy fats too, and they contain no added sugar aside from the chocolate drizzle, so they're a treat that actually feels satisfying.

Coffee Peanut Butter Banana Popsicle Variations

There are a lot of ways you can tailor these creamy peanut butter popsicles to suit your own tastes and dietary preferences. To keep them vegan, make sure to choose vegan chocolate. If you want to avoid added sugar, omit the chocolate drizzle or use unsweetened chocolate. If you can't eat peanuts, any nut/seed butter will work in place of the peanut butter; you can also try using coconut cream or yogurt instead.

Although these popsicles are a great summer dessert, they can also work beautifully as a make-ahead and refreshing breakfast for a hot morning. If you want to make them into breakfast, you can omit the chocolate and instead blend in a few dollops of high-protein yogurt and/or protein powder to make them more substantial. You can even dip the finished popsicles in yogurt and then roll them in granola to enhance the breakfast feel. Don't have molds? No worries; you can easily make these banana popsicles in paper cups instead. The recipe as written should fill about four regular-size popsicle molds, three large paper cups, or six small paper cups.

Coffee Popsicles Made with Local Coffee

This coffee popsicle recipe is designed to go with their innovative Rogue Roast. If you're a coffee connoisseur, you'll know that light roasts are all the rage right now. And while light roasts are interesting and subtle, I personally prefer a big, bold, rich dark roast. Their Rogue Roast is deep, dark, and bursting with flavor, but has no bitterness or burnt aftertaste like so many dark roasts do.

Ingredients and Substitutions

Here's what you'll need for this peanut butter popsicle recipe, as well as some thoughts, tips, and possible substitutions. If you make any substitutions, I'd love to hear about it in the comments section below.

  • Bananas. Make sure they're ripe, since the fruit is the only sweetener in this recipe.
  • Coffee. Cool it first. You could also use cold brew or a few shots of espresso if you prefer. Feel free to use decaf coffee if you're sensitive to caffeine or want to enjoy these at night.
  • Peanut butter
  • Dark chocolate. Optional, for the chocolate drizzle. You can omit the chocolate if you want to avoid added sugar and/or if you want to make these banana popsicles for breakfast.
  • Coconut oil. Optional, also for the chocolate drizzle.

I can't wait for you to try these unique coffee, peanut butter, and banana popsicles. The flavors go really beautifully together and the texture is creamy and decadent. They're a little bit sweet, a little bit nutty, very refreshing, and have an invigorating kick of caffeine.

They're also a treat you can feel good about enjoying since they're made with simple, whole-food ingredients. Thanks to protein-rich nut butter, naturally-sweet banana, and antioxidant-rich dark chocolate, as well as the option to blend in some protein powder and/or yogurt, these peanut butter popsicles can even work for breakfast.

These easy coffee popsicles feature sweet banana, creamy peanut butter, and a jolt of caffeine. They're the most satisfying summer treat (or maybe even breakfast!).

Ingredients

  • Two medium-sized, ripe bananas
  • 0.5 c strongly brewed, cooled coffee
  • 0.25 c peanut butter
  • 0.25 c dark chocolate
  • 1 tsp coconut oil

Instructions

  1. Brew and cool the coffee.
  2. Combine the bananas, coffee, and peanut butter in a high-power blender and blend until you have a creamy, smooth texture.
  3. Pour the mixture into popsicle molds or paper cups. This should fill about four regular-size popsicle molds, three large paper cups, or six small paper cups.
  4. Freeze the mixture for about an hour, or just until the top surface has barely solidified. Insert popsicle sticks about two-thirds of the way in, making sure that the sticks are centered and upright.
  5. Freeze overnight.
  6. If using molds, run them under hot water for a few seconds before removing the popsicles.
  7. For the drizzle, combine the dark chocolate with the coconut oil and melt it on the stovetop or in the microwave until smooth and glossy, stirring frequently to avoid burning. Drizzle each popsicle with chocolate and return it to the freezer until hardened.
  8. Store the finished popsicles for up to a week in a tightly-sealed container in the freezer.
