Raw Vegan Brownies with a Matcha Twist

If you're looking for a decadent treat that actually makes you feel good, you're going to love these dreamy matcha brownies. They're everything you could want in dessert: a chewy, dense, and chocolatey brownie, a fresh and flavorful matcha icing, and a cute two-bite size. They're easy to make and require no baking, so you can have these raw vegan brownies in no time.

In case you need any additional incentive, these unique no-cook date brownies are made with just a few simple whole food ingredients. In fact, they're basically just nuts and fruit; they're a healthy and protein-rich treat that you can enjoy for dessert, a snack, or even breakfast on the go. I'm absolutely smitten with these tasty and easy matcha brownies and I know you will be too.

How to Make Raw Vegan Brownies

These healthy date brownies are a cinch to make since they require only a few ingredients and no baking. You'll just pulse the brownie ingredients (dates, macadamia nuts, and cacao nibs) in a food processor until the mixture clumps into a sticky ball, then press it into miniature cupcake molds. Next, you'll mix up the simple icing (coconut butter, a dash of maple syrup, and matcha) and add it to the top of the brownies. Let them set in the fridge, then pop them out of the cupcake molds.

Although these matcha brownies are easy to make, you'll need a food processor. I also highly suggest using a silicone miniature cupcake mold so that you can easily remove each brownie bite by pushing the flexible mold up from the bottom. If you don't have a silicone mold, I'd recommend making them in a bread pan lined with a few layers of parchment paper, wax paper, or even plastic wrap, then slicing them into small squares. This recipe will not work well in a traditional metal cupcake pan since it will be difficult to get the brownie bites out of the molds.

Matcha Brownie Variations

There are a lot of ways to customize this healthy date brownie recipe to make it work for you. Feel free to use almonds or cashews instead of macadamias, or to add a pinch of cinnamon or fresh ginger to the crust. You can also use chopped dark chocolate in place of the cacao nibs, but make sure to add it toward the very end (after the dates and nuts are already broken down); otherwise, the heat of the food processor will cause the chocolate to melt.

Although I've written this recipe to create matcha brownies, you can easily swap the matcha with any other flavors you like. Omit if for simple brownies with a coconut icing, or add freeze-dried raspberry powder, espresso powder, cinnamon, colorful superfood powders like blue spirulina, or even a dash of your favorite liqueur.

As written, I suggest adding a small amount of maple syrup to the matcha and coconut butter icing. If you'd rather make these raw vegan brownies with no added sweetener, you can omit the maple syrup. In that case, you might consider decreasing the amount of matcha slightly to make sure the icing isn't bitter.

  • Pitted dates
  • Roasted salted macadamia nuts. This recipe will also work fine with raw macadamias, although the crust will be less flavorful.
  • Cacao nibs
  • Coconut butter. This is a thick butter made from coconut meat. Look for it in jars in the nut butter section of artisan grocery stores. It is not the same thing as coconut milk or coconut cream.
  • Maple syrup

  • Unsweetened shredded coconut

These raw vegan brownie bites have a decadent, chewy texture and a creamy matcha icing. They're a treat you can feel good about enjoying since they're made with simple whole-food ingredients.

Ingredients

For the Brownies

  • 1.5 c pitted dates
  • 0.5 c roasted salted macadamia nuts
  • 0.5 c cacao nibs

For the Matcha Topping

  • 0.5 c coconut butter
  • 2 tbsp maple syrup
  • 2 tsp matcha
  • 2 tbsp unsweetened shredded coconut

Instructions

  1. Check each date to ensure that there are no pits.
  2. Combine the pitted dates, macadamias, and cacao nibs in a food processor. Process just until the mixture starts clumping into a sticky ball.
  3. Press the brownie mixture into the 12 cups of a miniature silicone cupcake pan, leaving about a quarter inch of space at the top of each to accommodate the topping. Roll any extra brownie mixture into balls and enjoy them as snacks.
  4. To make the topping, combine the coconut butter and maple syrup, stirring until smooth. If needed, warm the coconut butter slightly in the microwave until it is soft and runny. Stir in the matcha.
  5. Drizzle the matcha icing on top of each brownie to create a thin, even layer.
  6. Sprinkle each brownie with unsweetened shredded coconut, pressing it down gently so that it sticks into the matcha topping.
  7. Place the cupcake pan in the refrigerator overnight for the brownies to set.
  8. Gently push the silicone cupcake molds inside-out from the bottom to release each brownie. Store the completed brownies in a sealed container in the refrigerator for up to a week.
