Vegan Waldorf Chickpea Salad
Loaded with juicy grapes, crisp celery, crunchy almonds, hearty chickpeas, and a decadent tahini dressing, this vegan Waldorf salad riff is a year-round favorite. It easy to make, works great for healthy meal prep, and is perfect for a picnic.
Ingredients
For the Dressing
- 0.25 c creamy tahini
- 2 tbsp dijon mustard
- 1 tbsp maple syrup
- Generous salt and pepper
For the Salad
- 2 15-oz cans of chick peas
- 3 celery stalks with leaves
- 0.5 c raisins
- 1 c red grapes
- 0.25 c slivered almonds
Instructions
- To make the dressing, combine all of the ingredients in a large mixing bowl (the same bowl you'll make the salad in) and stir.
- Drain and rinse the chick peas.
- Peel the celery and slice the stalks into thin slivers. Set aside the celery leaves.
- To the bowl with the dressing, add the chick peas, chopped celery, and raisins. Mix well.
- Add the grapes, celery leaves, and almonds, then mix again gently.
