Tropical Coconut Lime Hummus
This unexpected coconut hummus features tart lime and crunchy macadamias. It's a tropical vacation in a bowl!
Ingredients
- Two 15-oz cans of chickpeas, drained and rinsed
- 0.5 c creamy tahini
- 0.5 c coconut cream
- 0.5 tsp salt
- Juice and zest of a lime, divided
- 0.25 c roasted salted macadamia nuts
- Sprig of fresh mint
Instructions
- In a food processor, combine the chickpeas, tahini, coconut cream, salt, and lime juice. Process for several minutes until a smooth, creamy consistency develops, scraping down the sides and adding a splash of water if needed.
- Transfer the hummus to a serving bowl.
- Garnish with chopped macadamia nuts, finely chopped fresh mint, and lime zest.
