The ULTIMATE Healthy Brownies (Vegan, Grain-Free, High-Protein)

You'll be amazed by these healthy vegan brownies. They're rich, indulgent, and fudgy, despite the fact that the ingredients are mostly just fruit and nuts. I think this is the single most nourishing brownie recipe on the internet. You NEED to try these!

Ingredients

  • 2 c dates, pitted
  • 1 c peanut butter
  • 1 c soy/nut milk of choice
  • 0.25 c cocoa powder
  • 2 tbsp flax seed meal
  • 1 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • 1-3 tsp espresso powder
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 c dark chocolate chips, plus more for sprinkling on top
  • 0.25 c chopped macadamia nuts, plus more for sprinkling on top

Instructions

  1. Preheat the oven to 350 and line an 8x8 baking dish with parchment paper.
  2. Measure all of the brownie ingredients EXCEPT for the chocolate chips and macadamias into a food processor. Process until you have a thick, sticky dough that's homogeneous throughout.
  3. Stir the chocolate chips and macadamias in by hand.
  4. Spread the dough into the prepared baking dish with a spatula to create a layer of even thickness that goes all the way into the corners. If desired, add additional chocolate chips and macadamias to the top surface of the batter.
  5. Bake at 350 degrees for about 25-30 minutes until just barely cooked through in the center. Remove the brownies from the oven. If the top of the brownies has puffed up during baking, gently press the top down while they're still warm to ensure a rich, fudgy texture.
  6. Cool the brownies to room temperature before slicing. Store the brownies in a sealed container in the refrigerator for up to a week.
