Vegan Apple Pie Granola (Made with Applesauce!)

Bursting with warming fall spices and cozy vibes, this vegan apple pie granola tastes just like the classic dessert but in a crunchy format. You'll never believe that it gets most of its sweetness from applesauce.

Ingredients

  • 1 c unsweetened apple sauce
  • 0.25 c maple syrup
  • 0.25 c melted coconut oil
  • 1 tsp vanilla
  • 3 c old fashioned oats
  • 1 tbsp cinnamon
  • 1 tsp ginger powder
  • 0.5 tsp nutmeg
  • 0.25 tsp allspice
  • 0.25 tsp salt
  • 0.5 c raw pecans
  • 1.5 c dried or freeze-dried apple slices
  • 0.25 c crystallized ginger

Instructions

  1. Bring all the ingredients to room temperature and melt the coconut oil.
  2. Stir together the apple sauce, maple syrup, coconut oil, and vanilla in a small bowl or large measuring cup.
  3. In a mixing bowl, combine the oats, spices, and salt.
  4. Pour the wet mixture over the dry and mix well to combine.
  5. Spread the mixture across a large sheet tray.
  6. Bake at 350 for about 40 minutes, stirring every 10-15 minutes. Add the pecans and return the granola to the oven.
  7. Bake for an additional 10-20 minutes until the oats are golden brown and the pecans are lightly toasted.
  8. Cool completely by setting the sheet tray on a wire rack.
  9. Chop the dried or freeze-dried apple chips coarsely, cut the crystallized ginger very finely, and add both to the granola.
  10. Store the granola in a sealed container.
