Vegan Apple Pie Granola (Made with Applesauce!)
Bursting with warming fall spices and cozy vibes, this vegan apple pie granola tastes just like the classic dessert but in a crunchy format. You'll never believe that it gets most of its sweetness from applesauce.
Ingredients
- 1 c unsweetened apple sauce
- 0.25 c maple syrup
- 0.25 c melted coconut oil
- 1 tsp vanilla
- 3 c old fashioned oats
- 1 tbsp cinnamon
- 1 tsp ginger powder
- 0.5 tsp nutmeg
- 0.25 tsp allspice
- 0.25 tsp salt
- 0.5 c raw pecans
- 1.5 c dried or freeze-dried apple slices
- 0.25 c crystallized ginger
Instructions
- Bring all the ingredients to room temperature and melt the coconut oil.
- Stir together the apple sauce, maple syrup, coconut oil, and vanilla in a small bowl or large measuring cup.
- In a mixing bowl, combine the oats, spices, and salt.
- Pour the wet mixture over the dry and mix well to combine.
- Spread the mixture across a large sheet tray.
- Bake at 350 for about 40 minutes, stirring every 10-15 minutes. Add the pecans and return the granola to the oven.
- Bake for an additional 10-20 minutes until the oats are golden brown and the pecans are lightly toasted.
- Cool completely by setting the sheet tray on a wire rack.
- Chop the dried or freeze-dried apple chips coarsely, cut the crystallized ginger very finely, and add both to the granola.
- Store the granola in a sealed container.
